Spelt salad with asparagus spread

A fresh, light and traditional Molisan recipe, perfect for the hot summer days.

Spelt salad: ingredients

  • 200 g organic pearled spelt
  • 80 g asparagus spread
  • Salt
  • 50 g caciocavallo cheese flakes
  • Red garlic spread
  • Pepper
  • 50 g datterini tomatoes
  • Rocket salad
  • Fresh basil
  • 5 teaspoons extra virgin olive oil

Spelt salad: directions

Wash the pearled spelt under running water and boil it in salted water for 20 minutes.

Afterwards drain the spelt and season with extra virgin oil, then let it cool.

In the meantime, drain the datterini tomatoes and mix with red garlic spread, extra virgin olive oil, salt and fresh basil.

Add the asparagus spread to the previously prepared spaccatelli tomatoes mix and finally add it to the spelt.

Mix and garnish with rocket salad and caciocavallo flakes.

Finally, season with pepper and serve the freshh spelt salad.
